How espresso machines differ

Coffee machines differ in the number of pumps

A pump is a device that creates pressure in the coffee machine and also pumps water into the boiler. The espresso machine can have a different number of pumps:

1. One pump. On most coffee machines, one pump performs several functions at once. It builds up pressure and spills water in each coffee group, and also pumps water into the boiler with water for heating. Due to the same pump, the same pressure is set on all groups at which the espresso is prepared.

The pumps of some coffee machines do not pump water into the boiler, but only work for the pouring of espresso. They use the pressure in the water supply system to which they are connected to pump water into the boiler. When the water level falls, the valve opens, but the pump does not turn on. If you plan to work on such coffee machines from bottled water, and not from the water supply, then you will have to use additional pumps that will create pressure. But this is rather an exception, the pumps of most models of coffee machines work both for pouring water in the group and for pumping water into the boiler.

2. Several pumps. There are coffee machines with separate pumps for each coffee group. Their main advantage is that you can adjust the pressure separately for each of the coffee groups.

Disadvantages of coffee machines with separate pumps: they are much more expensive than coffee machines with one pump. Also, several pumps take up quite a lot of space.

Multiple pumps can come in handy if you plan to use different coffee recipes with different pressures on different coffee groups.

Coffee machines differ in pump types

Vibrating pumps have a simple design and are installed mainly on coffee machines that are designed for low performance. On coffee machines with vibration pumps, an Over Pressure Valve is installed. Rotary pumps are installed on most professional coffee machines. They consist of the pump itself and an electric motor that rotates the blades inside the mechanism.

Unlike vibrating pumps, rotary pumps create more stable pressure and are less noisy. However, they take up significantly more space and cost about 200 euros, not including the electric motor.

Rotary pumps can be located inside the espresso machine or outside. Remote pumps can be installed, for example, in a cabinet under the coffee machine, which is convenient when changing pressure settings.

These machines have one large boiler, often over 5 liters. It maintains the required pressure and temperature of 120 ° C.

When the espresso pump is turned on, cold water from the water supply enters the heat exchanger, heats up and goes to the group. From there it already gets into a pill with coffee. By opening the steam tap, which is connected to the top of the boiler, steam is obtained for frothing milk.

Disadvantages:

  1. The water temperature during the preparation of espresso is unstable, and it is very difficult to adjust it precisely. The temperature is often too high at the beginning of the extraction and becomes insufficient after making several cappuccino or using water from the boiler.
  2. Extra time is needed to prepare the espresso. After the machine has warmed up, there is overheated water in the heat exchanger, the temperature of which is too high for making an espresso. Therefore, before preparing a cup of coffee, a “blank draw” should be carried out in order to drain the superheated water into the drip tray.

For a single boiler coffee machine, the size of the boiler is of great importance. The larger it is, the less likely it is that the temperature will drop on an intense flow. We recommend coffee machines with boilers from 10 liters.

Multi-boiler coffee machines

There are two-boiler coffee machines with separate boilers for steam / hot water and espresso. Also three- and even four-boiler, where each group has a separate espresso boiler in addition to a boiler for steam and boiling water.

You can adjust the temperature separately for each group. This can be useful if you plan to brew different coffees on the same machine at the same time: lighter and darker roasts.

However, such a coffee machine costs several times more than a single boiler.

The coffee machines regulate heating using a pressure switch or a PID controller.

The pressure switch maintains the preset pressure range and boiler temperature in the coffee machine. It works on a very simple principle. As the water boils in the boiler and a certain pressure is reached, the circuit, closed by the pressure of the spring, opens and heating stops. A pressure switch is not installed on machines with a PID controller. The electronic controller uses a sensor to constantly check the temperature and, if necessary, through SSR (Solid State Relays), turns the heating element on and off. Typically all coffee machines with separate boilers are controlled by a PID controller. Advantages – it controls the temperature of the water in the boiler with a high degree of accuracy.
